Apricot Bars

These Apricot Bars make a delicious snack. They’re about as wholesome as it gets: oats, brown sugar, cinnamon and vanilla! Somewhere between a fruit bar and a crumble, they will surely taste yummy going down!

  • 1 can Baker's Joy® Original Non-Stick Baking Spray with Flour
  • 1 cup dried apricots
  • 1 cup orange juice
  • 1 1/2 cups quick or old fashioned oats (uncooked)
  • 3/4 cup all-purpose flour
  • 1/2 cup SugarTwin Granulated Brown or granulated brown sugar
  • 1 tsp. cinnamon
  • 1 tsp. baking powder
  • 1/4 tsp. salt
  • 1/2 cup butter (melted)
  • 1 tsp. vanilla extract


Preheat oven to 350°F. Spray an 8' x 8' baking pan with Baker's Joy® spray. Combine apricots and orange juice in a small saucepan. Bring to a boil, then reduce heat and simmer for 10 minutes and set aside to cool. Drain and finely chop apricots. Combine flour, oats, SugarTwin® Granulated Brown, cinnamon, baking powder and salt. Pour melted butter and vanilla into mixture and stir well. Reserve 3/4 cup of oat mixture, press remaining oat mixture evenly into bottom of prepared pan. Spread apricots over oat mixture and sprinkle the reserved oat mixture over apricots. Bake 40 minutes or until firm. Cool completely on wire rack. Cut into squares.
