Chai Spiced Tea Bread

  • 1 can Baker's Joy® Original Non-Stick Baking Spray with Flour
  • 2 1/4 cups all purpose flour
  • 1/2 cup tea (prepared)
  • 3/4 cup sugar
  • 3/4 cup brown sugar
  • 2 tsp. vanilla (additional 1/4 tsp. needed for glaze)
  • 2 tsp. baking powder
  • 1/3 cup milk (additional 3-5 tsp. needed for glaze)
  • 2 eggs (lightly beaten)
  • 1 tsp. ground cardamom
  • 1/2 tsp. salt
  • 1/4 tsp. ground ginger
  • 1/2 tsp. ground cinnamon (additional needed for glaze)
  • 1/4 tsp. ground allspice
  • 3/4 cup unsalted butter (softened)
  • 1 cup powdered sugar


Preheat oven to 350°F. Spray a 9x5-inch loaf pan with Baker's Joy® spray. Combine flour, sugar, brown sugar, baking powder, cardamom, cinnamon, salt, ginger and allspice in large bowl. Cut butter in to flour mixture until mixer resembles coarse crumbs (Can use paddle attachment of stand mixer). Stir in eggs, tea, milk and vanilla (2 tsp.) just until moistened. Pour batter into prepared pan. Bake 1 hour 10 minutes or until toothpick inserted in center comes out clean. Cool in pan on wire rack 10 minutes. Loosen sides of loaf from pan; remove from pan and cool completely on wire rack. Glaze: In small bowl, combine all ingredients (powered sugar, 1/4 tsp. vanilla, 3-5 tsp. milk, cinnamon). Stir until smooth. Drizzle evenly over cooled bread. Let stand 15 minutes or until glaze hardens.
