Chili Cheese Cornbread

A mouth watering southwest twist on an original family favorite!

  • 1 can Baker's Joy® Original Non-Stick Baking Spray with Flour
  • 1 cup all purpose flour
  • 1 cup yellow cornmeal
  • 3 Tbsp. sugar
  • 1 Tbsp. baking powder
  • 1/2 tsp. salt
  • 2 eggs
  • 1/2 cup unsalted butter (melted)
  • 1 cup frozen corn (thawed)
  • 1 4 oz. can Ortega® chopped green chiles
  • 1 cup Cheddar or Monterey Jack cheese (shredded)


Preheat oven to 350˚F. Spray 8 x8- inch baking dish with Baker's Joy® spray. Combine flour, cornmeal, sugar, baking powder and salt in a large bowl. Mix egg, milk and melted butter. Stir egg mixture into flour mixture just until moistened. Stir in corn, chilies and cheese. Pour into prepared baking dish. Bake 40 to 45 minutes or until toothpick inserted into center comes out clean. Serve warm.
