Ginger Scones

Delightful scones with a hint of ginger, perfect for tea time or any time!

  • 1 can Baker's Joy® Original Non-Stick Baking Spray with Flour
  • 2 cups all purpose flour
  • 3 Tbsp. sugar (divided; reserve 1 tsp.)
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 6 Tbsp. unsalted butter
  • 1/3 cup crystalized ginger (chopped)
  • 1 tsp. grated orange zest
  • 1/4 tsp. ground cardamom
  • 3/4 cup heavy cream


Preheat oven to 400°F. Spray baking sheet with Baker's Joy® spray. Combine flour, 3 Tbsp. sugar, baking powder and salt in medium bowl. Cut in butter with pastry blender or two knives until mixture resembles coarse crumbs. Stir in crystallized ginger, orange zest and cardamom. Gradually stir in 3/4 cup heavy cream just until mixture holds together. Knead gently on lightly floured surface and shape dough into ¾-inch thick circle (about 7 to 8 inches). Cut into 8 wedges with floured knife. Arrange wedges on prepared baking sheet. Brush tops with reserved heavy cream, then sprinkle with remaining sugar. Bake 17 minutes or until golden. Cool 2 minutes on wire rack. Serve warm with butter, honey or fruit preserves.
