Hot Cocoa Cake

If you want something a bit different than your everyday chocolate cake, why not try this Hot Cocoa Cake with bittersweet chocolate chunks and topped with decadent whipped cream! It will surely warm your belly and your heart!

  • 1/2 cup butter (softened)
  • 3 eggs
  • 1 tsp. baking powder
  • 1/2 cup unsweetened cocoa powder
  • 1 1/2 cups all purpose baking flour
  • 1 can Baker's Joy® Original Non-Stick Baking Spray with Flour
  • 1 1/2 tsp. vanilla extract
  • 2 cups sugar
  • 1 8 oz. container sour cream
  • powdered sugar (if desired)
  • whipped cream (if desired)


Preheat oven to 350°F. Spray 2 mini-bundt cake pans with Baker's Joy® spray. In a medium bowl, combine flour, cocoa powder, baking powder, baking soda and salt. Beat butter with sugar in a large bowl with electric mixer until light fluffy. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Alternately beat in flour mixture and and sour cream just until blended. Stir in chocolate. Pour 1/2 cup batter into each cavity. Bake for 20-25 minutes or until toothpick inserted into center of cake comes out clean. Cool pans on wire rack for 10 minutes. Remove from pan and cool completely. To serve, sprinkle with powdered sugar, if desired and serve with whipped cream. Recipe is courtesy of Nordic Ware®
