Spiced Pumpkin Pancakes

Pancakes with a delicious pumpkin flavor and other spices! Great for breakfast or brunch!

  • 1 can Baker's Joy® Original Non-Stick Baking Spray with Flour
  • 2 cups all purpose flour
  • 1/4 cup brown sugar
  • 2 tsp. pumpkin pie spice
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1 1/2 cups milk
  • 1 cup canned pumpkin
  • 1 egg
  • 2 Tbsp. unsalted butter (melted)
  • maple syrup


Combine flour, brown sugar, pumpkin pie spice, baking powder, baking soda and salt. Combine milk, pumpkin, egg and butter and stir into flour mixture. Spray large skillet or griddle with Baker's Joy® spray. Heat skillet over medium heat and pour batter by 1/4 cupfuls onto skillet. Cook 4 minutes or until tops are bubbly and edges are set. Flip and cook 3 to 4 minutes until golden. Repeat with remaining batter. Serve with maple syrup.
